Midwest Sushi

No, I was not clever enough to proclaim Pickle Wraps as Midwest Sushi, my friend did, but I love it!
Don't write them off until you've had one.
They really are tasty!
  1. Drain the pickles and lay them on a towel to dry.
  2. Lay out 2 slices of Corned Beef, lengthwise. I buy Carl Budding. Over lap 1/8 inch.
  3. Spread with softened cream cheese.
  4. Place pickle on one end and roll up
  5. Chill for several hours.
  6. Slice.

Sprout Bean Dip

My husband loves this dip.It was a strange concept to me when we first go married. Sprouts on top of chip dip?
Plain weird!
I have converted though, this is the only way I'll make it now.
Layer in the bottom of a lg pie dish or 8x11 pan
You want a thin layer of each ingredient so every scoop has a taste of it all.
  • 1/2 - 3/4 can of refried beans mixed with a few dashes of hot sauce
  • 2 - 3 ripe avocado's mashed until smooth, add a little lime juice to prevent browning. One of these works fabulous for this.
  • approximately 1 cup of sour-cream mixed with 1/2 bag of taco seasoning
  • shredded cheese
  • diced: onions, chives, tomatoes, olives, & jalapenos
  • top with a container of sprouts, chopped with a scissors first to make the dip easier to eat
Chill the dip for at least 12 hours, 24 is better.
Serve with tortilla or corn chips.

pickle wraps

It's not a Celebration without Pickle Wraps at our house...

What you need:
  • Corned Beef, thin sliced but not shaved
  • Dill Pickles
  • Cream Cheese
*Lay Out Corned Beef, spread with softened cream cheese.
Lay pickle on top.


Roll up into a log.
Cover and chill for several hours or overnight.
Cut off end extras. Cutremaining into bite size slices.

Chill until ready to serve.
