It's Foody Friday again! I didn't have time to make and take pictures of my recipes, we've been working outside this week, and going to baseball games. They won last night, it was a great game!
Chicken Salad Sandwiches
4 cups cooked, diced, chicken
8 slices bacon
2 cups diced celery
1/2 cups toasted pecans (optional)
* Mix above. Chill.
Dressing:
1 1/2 T dill pickle juice
1/2 tsp salt
1 cup Mayo ~ we use Grapeseed Oil Vegenaise
1 cup Sour Cream
* Mix dressing ingredients. Chill.
Toss chicken and dressing together right before serving. Serve in pita bread or in croissant's.
Thanksgiving Turkey
~I LOVE turkey prepared this way. I make it several times during the year because it is soooo yummy and moist.
*Unthaw turkey, cut off legs and wings. Put all pieces into a large container.
Mix:
10 cups water
1 cup tenderquick
3 T brown sugar
3 T liquid smoke
*Pour over turkey. Soak for 48 hours in the refrigerator. Turning several times to make sure all of the pieces are submersed in the marinade. Drain. RINSE WELL under cold water. Put pieces, without any liquid, into a roaster or oven at 250*. Cook for 4-6 hours depending on the size of your turkey. The turkey will fall off the bones. If you aren't going to serve the turkey right away, put the meat into a crockpot on low and cover with juices.
